  • 1L Woolworths Plantitude vanilla bean frozen dessert
  • 400grams cherries, pitted
  • 1tablespoons mixed spice
  • 100grams vegan dark chocolate, finely grated
  • 500grams Woolworths Plantitude vegan Belgian dark chocolate brownie

Description

Try this easy vegan ice-cream cake that uses a store-bought chocolate brownie and a refreshing frozen dessert. It's sure to be a hit with everyone.

Method

Step 1 of 5

Line base and sides of a 12 x 20cm (7.5cm deep) loaf pan with baking paper, extending baking paper 3cm above sides.

Step 2 of 5

Place frozen dessert in a large bowl and stand for 10 minutes or until slightly softened.

Step 3 of 5

Meanwhile, roughly chop two-thirds of the cherries. Add chopped cherries, mixed spice and half of the chocolate to frozen dessert and stir to combine. Spoon frozen dessert mixture into pan. Smooth top.

Step 4 of 5

Top frozen dessert mixture with brownies, trimming to fit and pressing lightly into mixture. Freeze for 2 hours or until firm. Freeze remaining cherries for 30 minutes before serving.

Step 5 of 5

Invert ice-cream cake onto a platter. Serve topped with frozen cherries and remaining chocolate.
