- 2teaspoons cornflour
- 300milliliter pure cream
- 1 vanilla pod, split, seeds scraped
- 2 egg yolks
- 2tablespoons caster sugar

Method
Step 1 of 2
Place cream, vanilla seeds and pod in a saucepan. Stir over medium heat and bring just to the boil. Remove from heat and set aside for 5 minutes for the flavour to infuse. Remove pod.
Step 2 of 2
Meanwhile, whisk egg yolks, sugar and cornflour to combine. Gradually whisk in the warm cream until smooth. Strain back into the saucepan and stir over low heat for 3-4 minutes or until thickened and coats the back of a wooden spoon. Serve custard warm or chilled.
