  • 3/4 cup pitted green olives, halved

  • 1/4 bunch basil, leaves picked
  • 1 lemon, cut into wedges (to serve)

Description

Succulent salmon fillets simmered in a rich semi-dried tomato, olive and basil sauce. Have this Tuscan-inspired seafood delight ready in half an hour.

Method

Step 1 of 3

Heat oil in a large, deep non-stick frying pan over medium-high heat. Cook salmon for 4 minutes or until golden. Turn and cook for a further 1 minute or until salmon is almost cooked through. Transfer to a plate.

Step 2 of 3

Heat same pan over medium heat. Cook onion, garlic and capers, stirring, for 2 minutes or until fragrant. Add paste and cook for 2 minutes, scraping base of pan with a wooden spoon. Add tomatoes, olives and stock, then bring to the boil.

Step 3 of 3

Return salmon to pan and cook for 1 minute or until warmed through. Scatter over basil and serve with lemon wedges and salad leaves.
