  • 1 large red capsicum, deseeded, cut into matchsticks
  • 100grams Macro honey soy tofu, cut into matchsticks

Description

Making sushi is easy! This vegetarian avocado and tofu sushi recipe will be a lunch box hit. They're nutritionally approved and super simple to prepare.

Method

Step 1 of 2

Working with one nori sheet at a time, lay it flat on sushi mat. Spread half the rice over nori sheet, leaving a 2cm border on top edge. Arrange a piece of avocado, and a few pieces each of the cucumber and capsicum on bottom edge of rice. Top with tofu then roll up tightly from the bottom edge, wetting exposed top edge with a little water just before rolling to enclose. Apply gentle pressure to seal. Repeat with remaining nori sheet and filling. Chill in fridge.

Step 2 of 2

Cut each sushi roll into 4 pieces and place in lunch boxes along with extra cucumber and capsicum, eggs, cheese and raspberries.
