- 1 Lebanese cucumber, cut into matchsticks
- 1 1/2 cups light Greek-style yoghurt
- 30grams sultanas
- 2 kiwifruit, halved

Description
Learn how to make rice paper rolls as part of a nutritionally approved lunch for kids. Simply pair them with yoghurt, sultanas and kiwifruit.
Method
Step 1 of 3
Bring a medium saucepan of water to the boil over high heat. Add chicken and reduce heat to medium. Cook for 15 minutes or until cooked through. Set aside to cool slightly. Transfer chicken to a board. Using 2 forks, roughly shred chicken.
Step 2 of 3
Fill a large bowl with lukewarm water. Soak 1 rice paper sheet in water for 10 seconds, remove and place on a clean board. Top with one-sixth each of the chicken, cabbage, carrot and cucumber. Roll sheet up, tucking in sides, to form a roll. Repeat with remaining sheets, chicken and vegetables to make 6 rolls. Cover and refrigerate until ready to pack.
Step 3 of 3
Place 3 halved rice paper rolls in each lunch box with kiwifruit and yoghurt topped with sultanas.
