- 1teaspoons olive oil cooking spray
- 1/4 cup Macro seed mix with pepitas and sunflower seeds
- 100grams butternut pumpkin, thinly sliced
- 2 wholemeal pita bread pockets
- 120grams light ricotta
- 75grams cherry tomatoes, halved
- 1/2 small red onion, thinly sliced into rounds
- 1/3 cup Woolworths light tasty shredded cheese
- 60grams baby rocket leaves
- 2 medium bananas

Description
Master this healthier pizza recipe for the kids' lunch boxes. Simply pair the feta and veggie pizzas with a crispy chickpea mix and a banana.
Method
Step 1 of 3
Preheat oven to 220°C/ 200°C fan-forced. Grease and line 2 large baking trays with baking paper.
Step 2 of 3
Place chickpeas on tray. Lightly spray with oil and season with pepper. Bake for 25 minutes or until crispy. Remove from oven and toss through seed mix. Set aside.
Step 3 of 3
Meanwhile, place pumpkin in a large microwave-safe bowl. Microwave for 1 minute on high until tender. Place pita bread on remaining tray and spread with ricotta. Top with pumpkin, tomato, onion and cheese. Bake for 15 minutes or until base edges start to brown. Remove from oven and top with rocket. Serve pizzas in lunch boxes with chickpea mix and bananas.
