Looking for new lunch-box ideas for the kids? They'll love this fun nachos lunch box with black beans, salsa, homemade tortilla chips and pineapple.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper.

Step 2 of 4

Place tortilla quarters on tray and spray with oil. Bake for 7 minutes or until light golden and crisp.

Step 3 of 4

Meanwhile, place tomato and cucumber in a small bowl and mix to combine. Season with pepper.

Step 4 of 4

Arrange tomato salsa, beans and yoghurt in a lunch box. Top with cheese and serve with tortillas, and pineapple and pepitas as snacks.
