  • 8 portobello mushrooms, stalks removed
  • 100grams ricotta
  • 40grams chopped spinach
  • 1 cup mixed veggies of choice
  • 50grams melting cheese of choice
  • 1 beaten egg
  • 1tablespoons mixed italian herbs

Description

Vegetarian stuffed mushies.
Instruction tip
I find that the the mushrooms can release a lot of water so I sometimes sear off in a fry-pan first if i have time. You can add yummy additions like sun-dried tomatoes, olives and grated sweet potato. Feel free to omit the egg, still works.

Method

Step 1 of 4

Preheat oven to 200°C. Brush the mushrooms on both sides with oil (I used olive oil). Place mushrooms stalk side up on a baking tray.

Step 2 of 4

Mix together spinach and ricotta in a mixing bowl. Add in the spices and egg (plus any, salt and pepper to taste)

Step 3 of 4

Divide the mixture between the mushroom's and top with grated cheese of choice (or you can mix this cheese in with the mixture)

Step 4 of 4

Bake mushrooms for 15-20 minutes or until the cheese/topping is golden and mushrooms are tender. Enjoy!
