  • 1 green capsicum, deseeded, thinly sliced
  • 1 1/2teaspoons ground coriander
  • 1 red onion, sliced
  • 1tablespoons continental parsley
  • 5milliliter virgin olive oil spray
  • 1 1/2teaspoons ground cumin
  • 1 1/2teaspoons smoked paprika
  • 4 slices seeds & grain sourdough bread
  • 2 diced tomatoes
  • 2 Macro Organic no added salt 4 bean mix, drained and rinsed
  • 2 cloves garlic, crushed

Method

Step 1 of 3

Combine onion, capsicum and garlic in a bowl and spray well with oil. Add spices and toss well to coat. Cook in a large saucepan over medium-high heat for 5 minutes or until softened. Stir in beans, tomatoes and 1/2 cup water and cook for 10 minutes or until sauce thickens.

Step 2 of 3

Meanwhile, heat a non-stick frying pan over medium heat. Spray bread with oil and cook for 4 minutes or until crisp and golden. Break into pieces.

Step 3 of 3

Divide bean mixture between serving bowls and serve topped with bread and parsley.
