- 1/2 cup kalamata olives, pitted
- 270grams garlic bread, cooked according to packet instructions (to serve)
- 400grams thick white fish fillets, diced
- 1 brown onion, diced
- 1 orange rind, finely grated
- 1/4 cup orange juice
- 1/2 cup flat-leaf parsley leaves, roughly chopped
- 400grams diced Italian Tomatoes
- 12 mussels, beards removed and cleaned
- 750grams marinara mix
- 1tablespoons olive oil
- 3 garlic cloves, finely chopped
- 2 stick celery, sliced
- 1/2 cup white wine

Method
Step 1 of 5
Heat oil in a large saucepan over medium heat.
Step 2 of 5
Add onion, garlic and celery and cook, stirring often, for 4 minutes or until tender. Add orange rind, 1/4 cup orange juice, tomatoes, wine and 3/4 cup water. Stir until well combined and mixture comes to the boil.

Add marinara mix and fish. Reduce heat to low and simmer, stirring occasionally, for 20 minutes or until fish is tender. Add mussels and olives to pan and cover. Cook for a further 5-8 minutes or until mussels open. Remove from heat. Stir through parsley.

Spoon into large serving bowls.

Serve with garlic bread.
