  • 2tablespoons olive oil
  • 2 medium onions, peeled and finely sliced
  • 1 medium red capsicum, cored and sliced
  • 4 cloves garlic, peeled and minced
  • 400grams chopped tomatoes
  • 1/3 cup white wine
  • 1 pinch saffron
  • 1teaspoons fennel seeds
  • 1kilograms mussels, cleaned
  • 350grams prawns, raw, peeled, deveined, chopped
  • 500grams hake, skinless and boneless, chopped

Description

This elegant and fragrant seafood stew with prawns makes a perfect dinner party main course served with crusty bread.

Method

Step 1 of 3

Heat the oil in a large, non-stick pan on medium heat and cook the onions and capsicum for 10 minutes, stirring. Stir in the garlic and cook for 2 minutes.

Step 2 of 3

Pour over chopped tomatoes and wine and tip in the fennel seeds. Bring to the boil then simmer for 6-8 minutes.

Step 3 of 3

Add the mussels and prawns, cover and cook for 3 minutes, shaking a couple of times. Stir in the hake cover and cook for 5-6 minutes until the prawns are opaque and the mussels are open. Discard any closed mussels and serve.
