  • 40grams butter, melted
  • 1/2 cup milk
  • 1teaspoons vanilla
  • 1 cup plain flour
  • 2teaspoons baking powder
  • 1/3 cup cocoa powder
  • 1/4 cup caster sugar
  • 1/2 cup brown sugar
  • 1 cup thickened cream (to serve)
  • 125grams raspberries (to serve)

Method

Step 1 of 5

Preheat oven to 190°C/170°C fan-forced. Grease a 6-cup baking dish and place on a large baking tray.

Place egg, butter, milk and vanilla in a medium bowl, whisking until combined.

Step 3 of 5

Sift flour, baking powder and half of the cocoa in a large bowl. Stir in caster sugar. Add egg mixture, then stir to combine. Spoon batter into dish and smooth surface.

Step 4 of 5

Combine brown sugar and remaining cocoa in a small bowl. Sprinkle evenly over batter. Carefully pour 1 cup boiling water over top of the mixture.

Step 5 of 5

Bake for 40 minutes or until pudding springs back in centre when touched. Stand for 5 minutes. Serve topped with cream and raspberries.
