  • 5tablespoons dried herbs
  • 1/4 cup soy sauce
  • 4 bayleaves
  • 1tablespoons onion powder
  • 1tablespoons garlic powder
  • 1 can chickpeas

Method

Step 1 of 5

Place the flour into a bowl and mix with the 6 cups of water then knead to form a dough.

Step 2 of 5

Place the dough in a bowl and cover with water and let sit for a few hours to loosen up the gluten. (I choose to let it sit for at least 6 hours)

Step 3 of 5

This is the time consuming part. You are going to rinse the dough and knead it at the same time till the water runs relatively clear (this alone will most likely take around 40 mins for this size dough).

Step 4 of 5

Blitz the can of chickpeas till relatively smooth then add them to the dough along with the onion powder, garlic powder and mixed herbs. Knead again to distribute the seasonings well.

Step 5 of 5

Place the seitan dough into a saucepan and cover with water, soy sauce and bay leaves and boil for 20 mins, then turn and boil for another 20 mins. Let cool and use in place of meat in recipes.
