  • 210grams can red salmon
  • 2tablespoons capers
  • 3 potatoes
  • 2tablespoons oil
  • 1tablespoons lemon juice
  • 1 pinch pepper (for seasoning)
  • 1/2 cup whole-egg mayonnaise (to serve)
  • 1 egg, whisked
  • 2tablespoons dry breadcrumbs
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 4

Cut carrots and potatoes into similar sized pieces. Steam until tender. Roughly mash and transfer to a bowl.

Step 2 of 4

Drain red salmon, discard skin and bones and flake. Add to potato mixture with capers, spring onions, lemon juice, parsley, breadcrumbs and half of 1 whisked egg.

Step 3 of 4

Mix until well combined. Season. Divide mixture into 6 and shape into 8cm diameter and 3cm thick rounds. Coat with remaining egg and extra breadcrumbs. Refrigerate for 30 minutes.

Step 4 of 4

Heat oil in a non-stick frying pan. Cook rissoles for 2-3 minutes each side until golden brown. Serve with green beans, mayonnaise and lemon.
