  • 750grams washed white potatoes, cut into 3cm pieces
  • 1tablespoons extra virgin olive oil
  • 660grams Woolworths COOK pork loin roast with herbs & spices
  • 1/4 cup white vinegar
  • 3teaspoons caster sugar
  • 1/2teaspoons table salt
  • 1 small red onion, halved, thinly sliced
  • 1/2 bunch continental parsley, leaves picked, roughly chopped

Description

Treat the family to a flavour-packed roast pork loin dinner that's ready in just 3 steps, complete with golden roast potatoes and a pickled onion salad.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Place potato in a large roasting pan. Drizzle with oil. Season and toss to coat. Bake for 10 minutes. Reduce oven to 200°C/180°C fan-forced. Move potato to edges of pan and place pork in centre on a small rack. Cover pan with foil. Bake for 50 minutes or until pork is almost cooked through. Uncover and bake for a further 10 minutes or until pork and potatoes are golden and cooked through.

Meanwhile, place vinegar, sugar, salt and 2 tbs water in a medium bowl. Stir until sugar has dissolved. And onion and toss to coat. Stand for 30 minutes. Drain.

Step 3 of 3

Place potato in a large bowl with pickled onion and parsley. Toss to combine. Slice pork and serve with potato salad.
