  • 2kilograms Woolworths bonesless roast pork leg
  • 2tablespoons extra virgin olive oil
  • 1tablespoons sea salt flakes
  • 1kilograms brushed potatoes, peeled, roughly chopped
  • 3 clove garlic, peeled
  • 1/2 cup milk
  • 20grams butter
  • green beans, steamed (to serve)
  • gravy (to serve)
  • 2tablespoons sage leaves, crispy (to serve)

Description

Make roast pork with crispy crackling for dinner this week, and complete your meal with a side of tasty garlic mash and crunchy green beans.

Method

Step 1 of 5

Remove netting from pork and pat dry pork with paper towels. Place, skin-side up, on a baking tray. Refrigerate, uncovered, overnight to dry out the rind.

Preheat oven to 240 degrees or 220 degrees fan forced. Line a large roasting pan with baking paper. Using a small knife, score rind, ensuring not to cut into meat. Re-tie pork with unwaxed kitchen string. Rub all over with oil, then salt. Bake for 30 minutes or until crackling is golden and blistered.

Reduce oven to 180 degrees or 160 degrees fan forced. Bake for a further 1 hour 30 minutes, or until pork is cooked through.

During the last 30 minutes of pork cooking time, cover potato and garlic in a large saucepan with cold water. Bring to the boil over high heat. Cook for 15 minutes or until tender. Drain. Return to pan over low heat. Toss for 1 minute or until excess liquid has evaporated. Remove from heat and roughly mash. Add milk and butter. Mash until smooth. Season.

Slice pork and serve with garlic mash, beans, gravy and sage.
