  • 1 cup fresh raspberries

  • 1 cup fresh dates, pitted
  • 1 1/2 cup cashews, soaked
  • 1 lemon, juiced
  • 1/4 cup maple syrup
  • 1/2 cup coconut milk
  • 1teaspoons rosemary leaves, finely chopped

  • 1 cup walnuts
  • 1/3 cup coconut oil

Method

Step 1 of 3

Blend dates, walnuts, rosemary and 1/4 tsp sea salt together in a blender or food processor until finely chopped. Divide mixture evenly into 6 x 3/4-cup glasses. Chill.

Step 2 of 3

To make the filling, drain cashews and blend with all ingredients, except berries, until smooth and creamy. Pour mixture, divided evenly, over nut mixture in each glass. Chill.

Step 3 of 3

Roughly crush raspberries with a fork. Spoon onto filling and garnish with extra rosemary. Refrigerate for 20 minutes or until set.
