  • 10 passionfruit, pulp (2/3 cup for recipe plus 1/3 cup to serve )
  • 7 ripe peaches
  • 125grams raspberries
  • 1/2 cup caster sugar

Method

Step 1 of 3

Halve 5 peaches and remove stones. Chop and place in a snap-lock bag and freeze for 4 hours or overnight. Strain passionfruit through a fine sieve. Discard seeds. Place the pulp in ice cube trays and freeze for 4 hours.

Step 2 of 3

Combine sugar and cup water in a saucepan over medium heat. Bring to a simmer and stir until dissolved. Set aside to cool completely.

Step 3 of 3

Transfer frozen fruit to a food processor and stand for 5 minutes to soften slightly. Process until very finely chopped. With the motor running, add the syrup and process until smooth. Place into a 1L freezer-safe container and freeze for 4 hours or overnight. Slice remaining peaches. Scoop sorbet into bowls and serve with peach slices, raspberries and extra passionfruit pulp.
