  • 1kilograms seedless watermelon
  • 4tablespoons mint leaves
  • 125grams fresh raspberries
  • 1 lime, 1.5 tbs juice
  • 1 lime slices, cut into slices
  • 500grams frozen raspberries
  • 3 free range egg whites
  • 1 1/2 cup caster sugar

Method

Step 1 of 6

Combine sugar and 1 1/2 cups water in a small saucepan. Heat over medium-low heat, without boiling, until sugar dissolves. Bring to the boil. Reduce heat to low and simmer, uncovered, for 5-7 minutes or until reduced slightly.

Step 2 of 6

Meanwhile, cover and refrigerate 300g watermelon until required. Coarsely chop remaining watermelon, then process with raspberries, lime juice and sugar syrup until smooth.

Step 3 of 6

Strain mixture through a fine sieve into a shallow baking dish. Discard solids. Cover and freeze until firm.

Step 4 of 6

Chop frozen mixture coarsely. Blend or process with egg whites until smooth and paler in colour. Return mixture to dish. Cover and freeze until firm.

Step 5 of 6

Cut reserved watermelon into 1cm-thick slices. Using a 3-4cm star cutter, cut stars from watermelon.

Step 6 of 6

Serve sorbet in chilled glasses topped with watermelon stars, lime slices, fresh raspberries and mint leaves.
