- 16 rasagulla, pre-made or bought
- 1L milk
- 4tablespoons caster sugar
- 30grams almonds, blanched, chopped
- 1teaspoons saffron, about 8 strands
- 1/2teaspoons ground cardamom
Description
Rasamalai is a rich Indian treat with milk dumplings in a lightly spiced creamy sauce.
Method
Step 1 of 4
Bring the milk to the boil in a large saucepan, stirring. Remove 2 tablespoons and place in a small bowl with the saffron strands. Set aside. Reduce the heat to a simmer and skim the clotted cream (malai) off the top with a slotted spoon and discard. Reduce the remaining liquid by half.
Step 2 of 4
Stir in the sugar and cook until dissolved then add the cardamom powder, almonds and saffron infused milk. Continue to simmer on a low heat.

Squeeze excess sugar syrup gently out of the rasgulla dumplings, then place in the simmering milk and cook for 2-3 minutes.
Step 4 of 4
Remove from the heat, cover with a lid and leave to cool to room temperature before serving.
