Method

Step 1 of 1

Preheat oven to 220°C. Dry 500g pork rind well using paper towel. Score using a sharp knife. Rub well with 1 tbs olive oil and salt. Lay, rind-side up, on a rack over a roasting pan. Bake for 40 minutes until rind bubbles, is a rich golden brown and crisp. Break in pieces to serve, or add to the crispy salad with pork.
