- 1 pineapple, peeled, cored, chopped
- 1/2 cup coconut water
- 2tablespoons pure honey
- 2 limes
- coconut yoghurt
Description
Enjoy the perfect flavour combo of pineapple, lime and creamy coconut in this refreshing and easy-to-make granita.
Method
Step 1 of 3
Place pineapple, coconut water, honey and juice of 1 lime in a food processor and process for 2 minutes or until smooth.
Step 2 of 3
Pour mixture in a 26 x 37cm (3cm deep) metal tray. Freeze, uncovered, for 2 hours or until just starting to freeze. Using a fork, scrape mixture into centre.
Step 3 of 3
Freeze for a further 1 hour and repeat scaping until mixture has completely broken up. Serve with remaining lime cut into wedges and yoghurt.
