- 400grams La Molisana Pastificio Extra Di Lusso Penne Rigate No 20
- 2tablespoons extra virgin olive oil
- 1packets brown onion, finely chopped
- 2 cloves garlic, crushed
- 200grams pancetta, sliced, roughly chopped
- 2packets 200g punnets swiss brown mushrooms, thickly sliced
- 25grams unsalted butter
- 1 punnet thyme, leaves picked
- 80grams parmesan, finely grated
- 1/2 cup light cooking cream
- 1/2 cup mozzarella, shredded

Method
Step 1 of 4
Cook pasta according to packet instructions. Drain, reserving fl cup cooking liquid.
Step 2 of 4
Meanwhile, heat oil in a large 26cm cast-iron saute pan over medium heat. Cook onion and garlic for 5 minutes, stirring, or until onion has softened.
Step 3 of 4
Add pancetta, mushroom, butter and half of the thyme, then cook for 10 minutes, stirring, or until mushroom is tender. Remove pan from heat.
Step 4 of 4
Preheat grill to high. Add parmesan, cream, reserved cooking liquid and pasta, then stir to combine. Sprinkle with mozzarella. Grill for 10 minutes or until mozzarella is golden. Serve scattered with remaining thyme.
