  • 125grams Woolworths soft & juicy pitted dates, roughly chopped
  • 1 1/2 cups crunchy peanut butter
  • 1teaspoons vanilla extract
  • 1tablespoons maple syrup
  • 3 cups puffed rice cereal
  • 200grams dark chocolate, chopped
  • 1tablespoons vegetable oil

Description

A perfect treat for afterschool snacking, this peanut butter and chocolate slice is reminiscent of childhood, with its base of creamy peanut butter and puffed cereal, and thick layer of scrumptious chocolate.

Method

Step 1 of 3

Grease a 3cm-deep, 16x26cm slice pan. Line base and sides with baking paper, extending paper 2cm above edge on all sides.

Step 2 of 3

Place dates and 1/4 cup water in a saucepan over medium heat. Bring to the boil. Remove from heat. Transfer to a small food processor and process until smooth. Transfer to a bowl and add peanut butter, vanilla and maple syrup. Stir until well combined.

Add cereal and stir until well coated. Spoon mixture into prepared pan and press out evenly to compact. Place chocolate in a microwave-safe bowl. Microwave on high for 1 minute, stirring with a metal spoon halfway through cooking, or until smooth. Stir in oil. Pour chocolate mixture over slice and spread to cover. Chill for 4 hours or until set. Cut into small squares. Serve immediately.
