  • 250grams cooked whole oranges (see method)
  • 250grams caster sugar
  • 250grams almond meal
  • 6 eggs
  • 1teaspoons baking powder

Description

This cake is so moist and easy to make and has no butter or oil. You just need to prepare the oranges in advance. Everyone will love it.
Instruction tip
For my cake I iced it with cream cheese icing which can be bought in the supermarket and added a few tablespoons of Cointreau and then grated some oranges over the icing. It is quite delicious but you can omit the Cointreau if making it for children.

Method

Step 1 of 6

Prepare the oranges in advance. For 250g of orange pulp you will need 2 to 3 oranges but I do about 6 oranges and freeze the rest in 250g lots for next time.

Place whole oranges in a saucepan of water, cover and simmer gently for two hours and then set aside to cool.

Step 3 of 6

Cut oranges into quarters and remove seeds, leave the skin on. Puree oranges in a food processor. Using a kitchen scale, measure accurately 250g of the pulp, the rest can be frozen for another day.

Step 4 of 6

Beat eggs and sugar until thick and pale. Fold in Almond Meal, baking powder and orange pulp.

Step 5 of 6

Pour into a greased and lined 20cm spring form tin and bake in the middle shelf, at 180° for 40 minutes or until cooked when tested with a skewer.

Step 6 of 6

Let it cool in the tin. If desired, decorate with cream cheese icing and add a dash of Cointreau or marinate some oranges in Cointreau.
