- 1 cup orange juice
- 1/3 cup self raising flour
- 1/2 cup white sugar
- 4 cups almond meal

Easy dessert or arvo tea.
Method
Step 1 of 5
Place oranges in a saucepan, cover with water and boil until soft and tender normally around one hour. Drain water from oranges, cool then blitz up till a fine pulp.

Line a springform 10 with baking paper Grease well.
Step 3 of 5
Beat eggs and caster sugar(1.5cups), until light and fluffy. Add almond meal, flour and orange pulp mix until combined.
Step 4 of 5
Place batter it in, bake in moderate oven 170 deg around 1 hour. Cool in tin.
Step 5 of 5
Orange glaze. Boil orange juice and white sugar until reduced till slightly thickened syrup. Add cut pistachio nuts and pour on top of plated cake. Enjoy with cream or ice cream.
