Coconut, Pistachio & Lemon Macaroons

- 3 cup shredded coconut
- 1 large lemon rind, finely grated
- 4 egg whites
- 1 cup caster sugar
- 80grams pistachios
Method
Step 1 of 5
Preheat oven to 180°C. Line 2 trays with baking paper.
Step 2 of 5
Process pistachios in a food processor until finely ground.
Step 3 of 5
Beat egg whites and sugar together for 10 minutes or until thick and glossy. Add rind. Beat until combined. Gently fold pistachios and coconut through.
Step 4 of 5
Drop heaped tablespoonfuls of mixture onto trays, 5cm apart. Bake for 15-20 minutes or until dry and light golden. Transfer to a wire rack to cool.
Step 5 of 5
Serve or store in an airtight container.
