Orange & Blueberry Tea Cake

- 1 1/2 cup self-raising flour
- 3/4 cup milk
- 60grams butter, melted
- 1 punnet blueberries
- 1 orange rind
- 1 egg
- 100grams caster sugar (save 40g for later)
- 1/2 cup almond meal
- 1/4 cup orange juice
Method
Step 1 of 6
Preheat oven to 180°C. Grease a 22cm cake tin and line base with baking paper. Combine flour, almond meal and 1/2 cup of caster sugar in a large bowl.

Whisk egg, milk and melted butter together until combined. Finely grate rind from the orange and set aside.

Juice orange and add 1/4 cup juice to the egg mixture. Pour liquid into flour mixture and stir with a wooden spoon until well combined.

Pour into cake tin and scatter with blueberries.
Step 5 of 6
Combine the orange rind and extra caster sugar, rubbing together with your fingertips. Sprinkle over the blueberries.
Step 6 of 6
Bake for 25 minutes or until a skewer inserted into the centre comes out clean. Leave in tin for 5 minutes then transfer to a wire rack to cool.
