Description

Five ingredients is all you need to make this stunning chia pudding recipe. The ombre layers are naturally coloured with stewed blueberries. Try it for breakfast today!

Method

Step 1 of 4

Place three-quarters of the blueberries and 2 tbs water in a small saucepan over medium heat. Cook for 4 minutes, stirring occasionally, or until slightly thickened and syrupy. Transfer mixture to a heatproof bowl and stand for 5 minutes to cool.

Step 2 of 4

Meanwhile, combine milk, chia seeds and maple syrup in a large bowl. Microwave on high for 1 minute 30 seconds, stirring halfway, or until thickened. Divide mixture among 3 bowls. Set aside.

Step 3 of 4

Place blueberry mixture in a small food processor. Process until almost smooth.

Step 4 of 4

Add 2 tbs blueberry mixture to one chia bowl and stir until well combined. Add remaining blueberry mixture to one of the remaining chia bowls and stir until well combined. Divide darkest chia mixture among 4 x 300ml-capacity glasses. Top with lighter chia mixture and then plain chia mixture. Refrigerate for 2 hours to chill. Top with yoghurt and blueberries. Serve.
