  • 1 packet marie biscuits
  • 150grams butter, melted
  • 500grams cream cheese, room temperature
  • 1 can condensed milk
  • 1/2-1 cup lemon, juiced
  • 300milliliter cream, whipped to soft peaks
  • 5 kiwi

A slightly lighter, fluffier, no bake cheesecake.

Method

Step 1 of 7

Process biscuits in food processor to fine crumbs. Add melted butter and pulse until the crumbs are all moistened. (Pictured cheesecake has both Marie and Choc Ripple in the base).

Step 2 of 7

Firmly press into the base and sides 20cm spring form pan. If you use a larger pan, you may need to press only onto the base. Into the freezer until firm or you have finished the filling.

Step 3 of 7

Process cream cheese until smooth. Add condensed milk and process until smooth. Add juice, starting with 1/2 cup. Check mixture has thickened. Taste. Add more juice as needed.

Step 4 of 7

Whip cream to soft peaks. Place into fridge until needed.

Step 5 of 7

Gently fold the whipped cream into the cream cheese mixture.

Step 6 of 7

Add to base, and chill for 2 1/2 hours minimum. Overnight is best.

Step 7 of 7

Serve with fresh or canned fruits. Kiwifruit and Passionfruit are great with this!
