- 2 yellow nectarines, halved, destoned, finely diced
- 1/2 red onion, finely diced
- 1 small red capsicum, quartered, deseeded, finely diced
- 2tablespoons mint leaves, finely chopped (plus extra leaves to serve)
- 2teaspoons extra virgin olive oil
- 2 limes, juiced (plus extra wedges to serve)
- Macro Organic corn chips (to serve)
Description
Bring the flavours of summer to your table with this vibrant salsa made with nectarines, lime and mint. Perfect with grilled fish or chicken, or in tacos.

Step 1 of 1
Combine all the ingredients, except corn chips, in a medium bowl. Top salsa with extra mint, then serve with corn chips and extra lime wedges.
