- 1/4 bunch mint, leaves picked, finely chopped (plus extra leaves to serve)

Instruction tip
Variation:To make this recipe vegetarian, replace the prosciutto with thinly sliced avocado. For added crunch, scatter over chopped macadamia nuts.
Method
Step 1 of 2
Place mango and prosciutto in a medium bowl and toss gently to combine. Divide mango mixture among lettuce leaves.
Step 2 of 2
Whisk remaining ingredients together in a small jug. Season with pepper. Spoon dressing over mango mixture. Serve topped with extra mint leaves.
