Method

Step 1 of 2

Place mango and prosciutto in a medium bowl and toss gently to combine. Divide mango mixture among lettuce leaves.

Step 2 of 2

Whisk remaining ingredients together in a small jug. Season with pepper. Spoon dressing over mango mixture. Serve topped with extra mint leaves.
