- 500grams mango sorbet
- 2 large mangoes
- 1 large lemon, juiced
- 2 cup coconut water
- 1 lemongrass stem, trimmed, bruised
- 1/3 cup caster sugar
Method
Step 1 of 2
Place coconut water, sugar, juice and lemongrass stem in a saucepan. Stir over medium heat until sugar dissolves and mixture comes to the boil. Simmer for 2 minutes. Remove from heat and set aside to cool and allow the flavours to infuse.
Step 2 of 2
Strain syrup into a blender. Discard solids. Remove flesh from mangoes and roughly chop. Set a little aside to use as a garnish, then add to blender with sorbet and ice. Blend until thick and smooth. Spoon into glasses and serve topped with reserved mango.
