- 1/2teaspoons ground cinnamon

- 1/4 cup demerara sugar

Description
This sweet spiced shortbread is perfect to make in advance and freeze; to gift as dough; or to turn into festive biscuits straight away.
Method
Step 1 of 4
Combine butter, sugar and vanilla in the bowl of a stand mixer fitted with a paddle attachment. Beat for 5 minutes or until pale and fluffy. Add flour and spices and mix on low speed for 20 seconds or until combined.
Step 2 of 4
Transfer dough to a lightly floured surface and knead gently to combine. Shape into a 4cm-wide, 48cm-long log. Wrap log in baking paper, twist ends and continue to roll back and forth until smooth. Wrap in foil. Freeze for up to 1 month.
Step 3 of 4
When ready to serve, thaw log in the fridge overnight. Preheat oven to 170°C/ 150°C fan-forced. Line a large baking tray with baking paper. Brush the outside of the log with egg and sprinkle with sugar to coat. Stand for 5 minutes to allow egg to set.
Step 4 of 4
Cut log into 1cm-thick slices and transfer to prepared tray. Bake for 30 minutes or until dry to touch. Cool for 5 minutes on tray before transferring to a wire rack to cool. Serve.
