  • 1 large leek
  • 5 potatoes, diced
  • chilli powder (to taste)
  • 1 pinch pepper (to taste)
  • 2 cubes gluten free vegetable stock cubes
  • 2tablespoons olive oil
  • 1 pinch pink salt ground (to taste)
  • 4 clove garlic, crushed

Method

Step 1 of 3

Cook the leeks and garlic until soft in a large saucepan with 2 tablespoons of oil. Add potatoes and stir for 4 minutes.

Step 2 of 3

Dissolve stock cubes in 1 litre of hot water and add to saucepan. Simmer until potatoes have softened.

Step 3 of 3

Blend ingredients to form a thick soup mixture. Add chilli powder, salt and pepper to taste. Serve.
