Try our delicious lamingtons recipe, a classic Aussie treat made with soft sponge cake, dipped in chocolate and rolled in desiccated coconut. Enjoy today!

Method

Step 1 of 3

Trim edges of 1 sponge cake layer. Cut into 12 cubes measuring 5cm each. Place onto a baking tray lined with baking paper and freeze for 30 minutes.

Step 2 of 3

Meanwhile, sift icing sugar and cocoa together into a heatproof bowl. Place bowl over a saucepan of simmering water. Add melted butter and milk, stirring until smooth and glossy. Place coconut into a separate large bowl.

Step 3 of 3

Using two forks, dip each cake square into the icing to completely coat, then toss in coconut. Place onto a wire rack over a tray. Leave until set.
