  • 4 tomatoes, diced
  • 2 Lebanese cucumbers, diced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup oregano leaves, finely chopped
  • 900grams lamb rump steaks or lamb leg steaks, cut into 5cm cubes
  • 2tablespoons thyme leaves, finely chopped
  • 2 garlic cloves, crushed
  • 1/2 cup lemon juice
  • 150grams kalamata olives
  • 1 small red onion, thinly sliced
  • 100grams feta
  • 1 1/2tablespoons extra virgin oil
  • 2 round lebanese bread
  • 2/3 cup tzatziki dip (to serve)

Description

Method

Step 1 of 4

Whisk together lemon juice, oil, garlic, oregano and thyme in a large bowl. Season with salt and pepper. Add lamb and toss to coat. Cover and refrigerate for at least 2 hours, or preferably overnight.

Step 2 of 4

Preheat a large chargrill or barbecue plate over medium-high heat. Thread lamb onto skewers (see tip).

Step 3 of 4

Combine tomato, cucumber, olives, red onion and feta in a large bowl. Drizzle with extra oil and season. Toss to combine and set aside.

Step 4 of 4

Cook lamb skewers, turning occasionally, for 8 minutes until browned on all sides. Spray bread with oil and cook for 2 minutes each side or until charred. Serve skewers with warm pita bread, salad and tzatziki.
