  • 1/3 cup dark brown sugar, firmly packed
  • 1/2 cup mint leaves
  • 1 small brown onion, finely chopped
  • 1/2 pomegranate, arils removed
  • 3 large zucchini, trimmed, cut into ribbons (or thinly sliced lengthways)
  • 12 lamb cutlets
  • 5milliliter virgin olive oil spray
  • 1/2 cup tomato sauce
  • 2tablespoons maple syrup
  • 1/2 cup orange marmalade
  • 100grams feta, crumbled
  • 2tablespoons extra virgin olive oil
  • 1tablespoons apple cider vinegar
  • 2 garlic cloves, crushed
  • 2tablespoons American mustard
  • 1teaspoons honey

Method

Step 1 of 4

Combine cola, marmalade, tomato sauce, sugar, maple syrup, mustard, onion and garlic in a glass or ceramic dish. Season. Add cutlets and turn to coat. Cover and refrigerate for at least 2 hours or overnight if time permits.

Heat barbecue grill on medium. Whisk oil, vinegar and honey in a jug to combine. Spray zucchini with oil. Grill for 1 minute each side or until charred. Transfer to plate. Drizzle with dressing. Top with feta, mint and arils.

Transfer marinade to a small pan over medium heat. Simmer for 3 minutes or until thickened slightly.

Step 4 of 4

Meanwhile, grill lamb cutlets until cooked to your liking. Serve with the sauce and salad.
