- 1tablespoons vegetable or olive oil
- 1kilograms chicken thigh fillets, cut into small cubes
- 60grams butter
- 1 small onion, finely chopped
- 1 small piece of fresh ginger, finely grated
- 3 garlic cloves, crushed
- 1/4 cup plain flour
- 2tablespoons curry powder
- 2tablespoons tomato paste
- 2 cup chicken stock
- 2 carrots, sliced diagonally
- 150grams green beans, ends trimmed, halved
- 1/4 cup apple sauce
- 1tablespoons salt-reduced soy sauce
- 1tablespoons honey

Method
Step 1 of 3
Heat oil in large deep frying pan over medium-high heat. Cook chicken for 5 minutes or until browned. Transfer to a plate.
Step 2 of 3
Melt butter in same pan and add the onion. Cook, stirring until browned, about 4 minutes. Add ginger and garlic, cooking for about 30 seconds. Add flour. Cook, stirring for 4 minutes or until mixture is well browned.
Step 3 of 3
Add curry powder, tomato paste and stir until combined. Add at least 3/4 of the chicken stock and stir until well combined. Add remaining stock and 1 1/4 cups water, bring to a simmer. Add chicken, carrot and beans. Simmer for 15 minutes or until chicken is cooked through. Add soy sauce and honey and cook for a further 5 minutes. Serve with rice.
