- 2tablespoons canola oil
- 1 large onion, peeled and sliced
- 2tablespoons garlic and ginger paste
- 1/2 medium green chilli, diced
- 1teaspoons ground coriander
- 1/2teaspoons cumin
- 1teaspoons curry powder
- 2 large tomatoes, chopped
- 1/2 bunch coriander, fresh, chopped stalks included
- 800grams jackfruit, drained
- 1 2/3 cup coconut milk, reduced fat
- 150grams spinach
Description
This simple and mild jackfruit curry is ready in minutes, perfect for a vegan Indian feast.
Method
Step 1 of 3
Heat the oil and cook the onions for 10 minutes. Stir in the garlic and ginger paste, green chilli and spices and cook for 3-4 minutes. Add the tomatoes and coriander stalks and cook for 4 minutes, until the tomatoes begin to break down.
Step 2 of 3
Add the jackfruit to the pan and cook for 2 minutes. Pour over the coconut milk, reduce the heat and simmer for 3 minutes. Stir in the spinach and simmer for 3 minutes, until wilted.
Step 3 of 3
Add more water if necessary and serve with fresh coriander on top and lime wedges on the side, if desired.
