  • 2tablespoons canola oil
  • 2 large white onion, peeled and chopped
  • 4 cloves garlic, peeled and diced
  • 2 medium carrot, peeled and chopped
  • 2 parsnip, peeled and chopped
  • 200grams lentils, cooked as per packet instructions
  • 400grams mixed beans, drained
  • 1 1/4 cup vegetable stock
  • 2 medium tomatoes, chopped
  • 1teaspoons cumin
  • 1teaspoons cinnamon
  • 1teaspoons allspice
  • 400grams couscous

Description

A legume packed tagine with Moroccan inspired spices.

Method

Step 1 of 5

Pre-heat the oven to 160°C.

Step 2 of 5

Heat up an oven safe dish on the pan with the oil and fry the onions, garlic, carrot & parsnip for 6 minutes while mixing.

Step 3 of 5

Cook the lentils as per packet instructions. Add all of the ingredients to the oven safe dish apart from the couscous and combine well, cover and place in the oven.

Step 4 of 5

Allow the dish to cook for 45 minutes. Cook the couscous as per packet instructions and then drain.

Step 5 of 5

Serve the drained couscous with the tagine ingredients from the oven.
