  • 60grams root ginger, 2cm piece, grated
  • 1 pinch ground turmeric
  • 1 pinch garam masala
  • 300grams red lentils
  • 1 lemon, grated zest and juice
  • 3 2/3 cup hot vegetable stock
  • 2 tomatoes, skinned and chopped
  • 1 handful fresh coriander, finely chopped

Method

Step 1 of 3

Heat the oil in a frying pan over a low heat. Add the onion and a pinch of salt, and sweat for 5 minutes until soft and translucent. Stir in the garlic, ginger, turmeric, and garam masala, and cook for a minute.

Step 2 of 3

Stir in the lentils and lemon zest, pour over the stock, and simmer for about 20 minutes until the lentils are cooked.

Step 3 of 3

Season well with salt and black pepper, and stir through the lemon juice, tomatoes, and coriander. Serve hot with naan bread or chapattis.
