  • 2teaspoons canola oil
  • 4 cloves garlic, peeled and minced
  • 5centimeters ginger, peeled and grated
  • 3 large spring onions, sliced
  • 1 large red capsicum, diced
  • 1tablespoons garam masala
  • 1teaspoons cumin
  • 1teaspoons ground coriander
  • 2tablespoons tomato puree
  • 1 cup coconut milk, light
  • 400grams falafel, ready made
  • 150grams spinach, chopped
  • 1 medium lime, juiced
  • 3tablespoons coriander, fresh, chopped

Description

Ready made falafel is delicious in a light coconut curry sauce for an easy vegan dinner.

Method

Step 1 of 4

Heat the oil in a large, deep pan on a medium high heat and add the garlic and ginger. Cook for 1 minute, add the spring onions and capsicum and cook for 3 minutes to soften. Stir in the spices and tomato puree and cook for 1 minute.

Step 2 of 4

Pour in 250ml of water, the coconut milk and half the lime juice. Bring to a simmer and cook for 10 minutes to reduce.

Step 3 of 4

Add the falafels to the pan, place the lid on and cook for 5 minutes. Stir in the spinach and remaining lime juice to taste.

Step 4 of 4

Serve with chopped coriander on top and rice or naan bread, if desired.
