Italian-Style Beef & Balsamic Onion Salad

- 1 large red onion, thinly sliced
- 1/4 cup balsamic vinegar
- 160grams rocket salad mix (or baby rocket)
- 125grams fresh smooth ricotta
- 400grams beef flat iron steaks
- 2tablespoons olive oil
- 1/2 bunch basil, leaves picked
- 1tablespoons brown sugar
- 260grams sweet berry truss tomatoes
Method
Step 1 of 4
Drizzle steaks with 1 tbs oil and season with salt and pepper. Heat a large frying pan over high heat. Cook steaks for 3 minutes on each side or until a dark golden crust forms. Remove from pan and rest, covered, for 6 minutes.
Step 2 of 4
Heat remaining oil in pan over medium heat. Cook onion for 5 minutes or until soft. Stir in vinegar, sugar and 2 tbs water, stirring until sugar dissolves. Bring to a simmer.
Step 3 of 4
Add tomatoes to pan and simmer for 2 minutes or until tomato skins just begin to split and soften.
Step 4 of 4
Thinly slice steaks. Arrange rocket on plates. Top with steak and onion and tomato mixture. Serve with a dollop of ricotta, basil leaves and drizzled with pan juices.
