Description
Feed the family with this sticky and satisfying honey soy chicken recipe with sesame seed rice. They'll be coming back for seconds!
Method
Step 1 of 5
Place soy, honey and mirin in a small saucepan over medium heat and bring to a simmer. Simmer for 5 minutes or until thickened slightly and reduced by one-third. Pour into a large bowl and set aside to cool completely.

Add chicken to soy mixture, turning to coat. Place chicken, breast-side down, in bowl, then place in fridge to marinate for 30 minutes or overnight, if time permits.

Preheat oven to 200°C/180°C fan-forced. Line a medium roasting pan with baking paper. Tuck wings under chicken, then place, breastside up, in pan. Tie legs together with unwaxed kitchen string, then pour over marinade. Bake for 1 hour 30 minutes, basting every 15 minutes, or until golden and cooked through. Cover loosely with foil and rest for 10 minutes.

Meanwhile, cook rice according to the absorption method on packet. Stir rice with a fork to separate grains. Transfer to a bowl, then top with nori and sesame seeds.

Serve chicken with rice, pickled ginger and onion.
