- 2 whole cauliflower
- 1/4 cup extra virgin olive oil
- 2teaspoons honey
- 1 lemon (zested and juiced)
- 60grams baby spinach leaves
- 1/2 bunch oregano, leaves picked
- 2 garlic cloves
- 500grams cocktail truss tomatoes
- 80grams prosciutto
- 180grams haloumi
Description
Learn how to make this show-stopping whole roasted cauliflower. It's cheesy, crispy on the outside and deliciously tender on the inside.
Method
Step 1 of 4
Preheat oven to 220°C/200°C fan-forced. Grease a large baking tray. Trim base of cauliflower, leaving a few leaves attached. Place cauliflower on tray.
Step 2 of 4
Combine haloumi, prosciutto and oregano in a bowl. Combine oil, zest, lemon juice, honey and garlic in a jug. Season. Add two-thirds of the honey mixture to haloumi mixture, stirring to combine.
Step 3 of 4
Using your hands, lightly press haloumi mixture over cauliflower head to secure.
Step 4 of 4
Bake for 1 hour, adding tomatoes and covering halfway with foil, or until cauliflower is cooked through and golden. Drizzle with remaining honey mixture. Scatter spinach over tomato and serve.
