- 2 bunches asparagus, trimmed
- 1tablespoons extra virgin olive oil
- 1/2 bunch mint, leaves picked, finely shredded
- 2 cups cooked penne
- 150grams snow peas,, trimmed, halved diagonally
- 1 small red onion, halved, thinly sliced
- 80grams parmesan, shaved
- 1/2 cup pine nuts, toasted
Description
Asparagus has never been tastier. This healthier pasta salad recipe is a breeze to prepare and will add a pop of green to your alfresco spread.
Method
Step 1 of 2
Preheat a barbecue grill or chargrill pan over medium heat. Brush asparagus with 1 tsp oil. Cook asparagus, turning, for 4 minutes or until lightly charred and tender. Transfer to a board and slice diagonally into 4cm lengths.
Step 2 of 2
Place mint and remaining oil in a small bowl and whisk to combine. Season with pepper. Combine pasta, snow peas, onion, cheese, pine nuts and asparagus on a large serving platter. Drizzle with dressing and serve.
