- 400grams tomatoes, canned, diced
- 1 carrots, peeled and cut into cubes
- 2 zucchini, cut into cubes
- 400grams chickpeas, canned, drained and rinsed

Description
This comforting one-pot chicken is packed full of vegetables and plenty of fiery harissa flavour.
Method
Step 1 of 3
In pot over medium-high heat, heat the 2 tbs of olive oil and brown the chicken pieces. Set the chicken aside.
Step 2 of 3
In the same pan, add the rest of the olive oil. Add onion and cook until translucent. Tip in the harissa paste and canned diced tomatoes. Mix thoroughly.
Step 3 of 3
Add the vegetables and chicken. Cook for 15- 20 minutes or until the chicken is cooked through and the sauce is slightly thick.
