  • 1/2 red capsicum, seeded and diced
  • 1/2 red onion, chopped
  • 2tablespoons parsley, chopped
  • 150grams button mushrooms, sliced
  • 1 pinch pepper (for seasoning)
  • 3 slice leg ham, sliced
  • 3tablespoons reduced-fat milk (standard milk can be used)
  • 30grams goat's cheese, crumbled
  • 6 eggs & 4 egg whites
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 4

Spray a non-stick frying pan with oil spray and cook onion, capsicum and mushrooms together over medium heat until softened. Transfer to a bowl. Add parsley, ham and season with pepper.

In a jug, whisk eggs and egg whites together with milk.

Step 3 of 4

Reheat pan and spray again with oil. Pour in half of the egg mixture and tilt pan to coat base evenly. As the edges set, lift with a spatula to allow uncooked egg to run underneath. Cook for 1 minute. Scatter over half the ham mixture and cheese.

Step 4 of 4

Carefully lift one edge of the omelette with a spatula and fold over to enclose filling. Slide out onto a serving plate and cut in half. Repeat process with remaining egg mixture and ham mixture. Serve.
