Got a hankering for something Hulk would enjoy? Learn how to make the ultimate comfort food, a deliciously green mac 'n' cheese that is packed with smashed veg - perfect for a cosy lunch or dinner.

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Place spinach, parsley and 1 cup milk in a food processor and process until very finely chopped. Set aside.

Step 2 of 4

Cook macaroni in boiling salted water according to packet instructions, adding broccoli in the last 2 minutes of cooking. Drain. Refresh under cold water. Set aside.

Step 3 of 4

Meanwhile, melt butter in a large saucepan over medium heat. Add onion and cook, stirring regularly, for 5 minutes or until softened. Stir in flour and cook for 1 minute or until thick and bubbling. Slowly add remaining milk, whisking constantly, until well combined. Bring to the boil, then reduce heat to low and simmer, stirring constantly, for 2 minutes or until thickened. Stir in mustard and 1 1/2 cups cheese. Cook, stirring, for 3 minutes or until cheese is melted. Remove pan from heat.

Step 4 of 4

Add spinach mixture to sauce, stirring until well combined. Add macaroni and broccoli to sauce and season. Transfer mixture to a 9-cup capacity baking dish. Scatter over remaining cheese, then bake for 25 minutes or until golden and cooked through. Serve.
